Here’s what really goes into a professional setup.
Space & Footprint
A serious espresso operation needs more than a parking spot. Ours does fit in a parking spot but here are some other considerations.
You should consider:
- Vehicle access routes
- Pedestrian flow
- Safe space
- Emergency access lanes
- Distance from other catering
Typical footprint:
vehicle + service zone + queue = around 4m x 4m.
If space is tight, a good operator can adapt (we adapt and have a small footprint) — but it’s good to know early.
Power: Mains vs Generator
This is the biggest anxiety point.
Professional espresso machines, grinders, fridges and hot water systems draw significant load.
Options usually include:
✔ direct mains supply
✔ event power distribution
✔ self-provided silent generator
A competent supplier will calculate this for you and bring the right connectors, cable management and safety systems. We can bring our generators to you or plug in to the supply, especially if a silent set is required.
Water & Waste
Expect the operator to be self-sufficient.
They should arrive with:
- fresh water
- waste water containment
- cleaning systems
- rubbish management
If they rely on your facilities, that should be agreed in advance.
Setup & Derig Time
Most professional units need:
- 60–90 minutes to set
- 45–60 minutes to pack down (end of day) 15 minutes pack down to move spots.
Tighter schedules are possible with planning – we can pack up and move in as little as 20 minutes to be on to the next location on a shoot if there are multiple locations per day.
Service Speed
A question planners rarely ask early enough:
How many drinks per hour can actually be produced?
One experienced barista on commercial equipment can typically deliver 80–120 drinks per hour depending on menu complexity.
If you expect spikes, staffing must reflect that. Gray is a seasoned barista and can cope with high demand.
Weather Resilience
Outdoor trading in the UK demands cover, lighting and protected serving positions.
If the supplier only works in sunshine, you’re exposed. We can wrap our cab in rainproofs and provide an easy up tent for those waiting for drinks. Simple. Just ask us if you’d like us to provide a catering tent.
Insurance & Compliance
Any serious provider should have:

✔ food safety systems
✔ risk assessments
✔ trained staff
